One of my favourite things in the whole-wide-world is peanut butter ( I don’t think anyone has ever noticed…hehe…so you can expect more peanut butter recipes…hopefully soon)…and now I have paired it with another of my other favourite things – cookies! These are delicious, soft and moreish peanut butter and honey cookies.
I was inspired to develop this recipe from all the international blogs I follow – they are forever making peanut butter sweet treats…which make so liss for peanut butter & sugar.
If you like your cookies to have a slightly more toffee-like flavour than peanut butter, add a little more honey. I was a little more conservative with my quantities but as long as you balance it out by adding some more flour…it will be perfect. You are looking for a soft dough consistency…not too sticky but not too dry.
You can make the balls the size you like, I like mine a little bigger and thicker so I made them 3 – 4 cm in diameter. However, you can make them smaller or bigger – just remember to adjust the cooking time slightly and keep an eye on them so you don’t burn them.
I like mine cooked so that they are just soft in the middle but crisp on the outside and quite thick – perfect for dunking in coffee! Yum! While sitting here in Parys at a client conference, writing this…I am wishing I was snacking on a few but sadly I have none as I sent them to my husband’s office to treat the guys (and they ate them all – not even a crumb left).
Below is the recipe and a few pics I took of my cookies – they were sooooo delicious!
Ingredients
- 3 1/4 cups cake flour
- 1 1/2 tsp bicarb
- 1/2 tsp salt
- 1 cup butter, softened
- 1 cup white sugar
- 1/2 cup honey, runny
- 1 cup peanut butter
- 1 - 2 tsp vanilla
- 2 large eggs
Method
- Mix together flour, bicard and salt, and set aside.
- In a mixing bowl/stand mixer (I used a Kenwood kMix), beat butter for about 30 second till creamed. Add sugar and peanut butter and beat until fluffy. Add eggs, vanilla and honey, beat well.
- Add flour mixture and mix until combined.
- Refrigerate dough for at least 1 - 2 hours (the longer you refrigerate the less they spread).
- Preheat oven to 180 degrees.
- Remove the dough from the fridge, shape into the balls and place on a baking tray. Use a fork to create stripes or crisscross on top.
- Bake in the oven for approx 10 mins or until golden brown.
- Remove from oven and let them cool completely & enjoy!
