Recipe: blueberry cheesecake fat bombs

If you are following a LCHF or banting lifestyle then you occasionally are in need of a snack to get you through the day and I find the best thing is a fat bomb…what is a fat bomb? They are exactly what the name implies, they are a snack which contains high concentrations of fat but little carbs. There are many different recipes online and I have tried a few and this one is by far my favourite. It is easy and so delicious! Also, I find that the blueberries sweeten it enough so I don’t add any additional sweetener – however you can if they are not sweet enough for you.

Tips for making the fat bombs:

  • The butter and cream cheese has to be a room temp to make these or they won’t mix in properly…which means they wont be super smooth but will still taste ok.
  • You don’t have to use blueberries, you can use any berry – strawberries are delicious too…but I am just a huge blueberry fan
  • They melt quickly and easily so don’t leave them in the fridge, they have to live in the freezer…so when you want to eat one, you can take it out and eat within 2 mins as it will have started to soften by then
  • I placed mine in chocolate moulds, but mainly because then they look like chocolates…anything to trick my brain! hehe!

Blueberry cheesecake fat bomb

Ingredients

  • 125g blueberries
  • 1 - 2 tsp honey or sweetener of your choice
  • 1 tsp vanilla extract
  • 150g cream cheese, at room temp
  • 60g butter, at room temp

Method

  1. Place the blueberries, sweetener and vanilla in a blender/food processor/thermomix and whizz up till it is mushy.
  2. cut/break up the butter & cream cheese into small blocks and pieces. Add these to the blueberry mixture and blend till well combined. The mixture will go a blue/purple colour that is what we want.
  3. Spoon the mixture into chocolate moulds/ice trays or small silicone muffin moulds and place in the freezer for about 2 hours or till set.
  4. When done, un-mould them and place them in a container. Keep the container in the freezer or they will melt. Enjoy!
