With this extreme heat we have been experiencing, I have been craving an ice cold pineapple and vanilla cocktail…which will go perfectly with an afternoon of lazying around the pool.
As one of my favourite cocktails is a pineapple caipirinha…I decided to give it a little twist and make it a pineapple and vanilla caipirinha, using Absolut Vanilla Vodka (also one of my favourites – it’s great with coke). If you don’t have or like the vanilla variant, it is also great with original Absolut Vodka.
To celebrate the heat and all things good in our lives, I invited some friends around and we made a batch of these delicious pineapple and vanilla caipirinhas… and the obviously relaxed at the pool side.
Pineapple & Vanilla Caipirinha (made with my favourite vodka – Absolut Vanilla)
Ingredients
- 70 g sugar
- 1 pineapple, roughly chooped
- 100 g Absolut Vanilla Vodka
- 1 litre pineapple juice
- 400 g ice
Method
- Place sugar in Thermomix bowl, and whizz for 10 seconds on speed 9
- Place pineapple in Thermomix bowl and chop for 5 seconds on speed 6
- Add juice, Absolut Vanilla Vodka and ice and blend for 1 minute on speed 10
- Pour into glasses over additional ice, decorate with pineapple, serve and enjoy.
This is a quick and easy cocktail recipe. It is a Thermomix recipe, but if you do not have one, a blender works just as well!
