I have always wanted to try Madeleine’s as I have read a lot about them. In case you don’t know what they are…they are delicious mini pillows of heaven…aka cake in shell shapes. The recipe below was taken from Crush Magazine and adapted from Tina Bester.

This recipe makes delicious soft and fluffy Madeleines with a hint of lemon. The only tip I have is make sure you grease the pans well so the Madeleines don’t stick. Otherwise, the recipe is easy and so yummy! It is a must for any treat or tea…I made them for my friend Candice’s baby shower.

Ingredients

  • 130 g batter, melted and cooled
  • 2 large eggs
  • 160 g castor sugar
  • 1 vanilla pod, halved and seeds removed
  • 1 tsp lemon zest
  • pinch of salt
  • 140 g cake flour
  • icing sugar for dusting

Method

  1. Preheat the oven to 180°C and generously butter and flour the Madeleine pans.
  2. Melt the butter and set it aside to cool.
  3. Using an hand mixer or stand mixer, beat the eggs and castor sugar in a large bowl until just blended. Add the vanilla seeds, lemon zest, salt and flour, and mix to combine.
  4. While mixing, add the cooled melted butter in a steady stream and beat until just blended.
  5. Spoon approx. 1 Tbsp of the batter into each indentation in the pan. Bake for 12–15 minutes until the cakes are puffed and golden brown.
  6. Cool for approx. 5 minutes and then gently remove the cakes from the pans.
  7. Dust with icing sugar and serve.
