Michel Sauvenier launches his handmade chocolates at Liège Café

I am a huge chocolate fan, especially good handmade artisan chocolate. Whenever, my husband goes to Europe I send him on a chocolate hunt. He has to come back with chocolate from that country and I don’t mean a Mars bar – I mean some of the finest European chocolate.

So you can imagine my delight, when I found out that the creator of some of the finest artisan chocolate in South Africa, Michel Sauvenier is launching his range of chocolates at Liège Café, which is a Belgian pastry shop in Atholl Square, Sandton.

More about Michel Sauvenier

Michel Sauvenier is originally from Elisabethville in the former Belgian Congo (now the Democratic Republic of Congo). However, he is now living in Johannesburg. He is a mining engineer turned chocolatier, who has followed his passion to master the art of creating artisanal Belgian chocolates.

He was trained in Belgium at the Chocolate Academy Centre from Callebaut in Wieze in 2010, and since then, has been creating his chocolates on a made-to-order basis online and supplying friends and family with his delectable treats.

What makes his chocolate special 

His chocolate is created from the Noble families of cocoa beans, using in particular the Criollo beans (the most prized), Trinitario (a hybrid of Criollo and Forastero) and National (the only aromatic bean prevailing amongst the Forastero variety).

Crafted predominantly using Grand Cru Chocolate from Felchlin – a boutique manufacturer in Switzerland – Michel Sauvenier now also creates varieties using the French premium chocolate, Valrhona.

You can buy Michel Sauvenier chocolates in a gift box of ten pieces, with five different varieties :

  • MANJARI 64%: Manjari releases fresh and acidic notes of red fruit with a delicate finish of roasted nuts.
  • JIVARA LACTEE 40%: Jivara’s seduction lies in its pronounced cocoa notes, in perfect harmony with the vanilla and malt finish.
  • CARAMELIA 36%: Soft, rich and voluptuous, Caramélia stands out with its rich milky flavor and compelling taste of salted butter caramel.
  • DULCEY 32%: Dulcey is smooth, creamy chocolate with a velvety and enveloping texture and a warm, blond color. The first notes are buttery, toasty and not too sweet, gradually giving way to the flavours of shortbread with a pinch of salt.
  • VOIRE 35%: White chocolate delicately sugared, Ivoire reveals aromas of warm milk enhanced by delicate vanilla notes.

Alternatively, you can buy his chocolates in a beautiful glass jar with a gold lid that contains beads of Noble chocolate in dark, caramel, white and milk flavours.

Each gourmet chocolate is expertly crafted by hand and only the best quality chocolate and freshest ingredients are used. No unnecessary sugar is added, which means that each piece of chocolate is the perfect balance of unique flavours and sweetness.
